Dietetic Internship Director/Lecturer
Wanda Siu-Chan has been the Dietetic Internship Program Director at SF State since 2007. She completed her B.S. in the Coordinated Undergraduate Program in Nutrition and Dietetics/Dietetic Internship at the University of California, Berkeley, and her M.S. in Human Nutrition at the University of New Haven.
In addition to managing the internship, Wanda also teaches the internship course, Seminar in Nutrition Assessment Across the Lifespan, as well as the Life Cycle undergraduate course. Wanda’s areas of interest include diabetes education, clinical nutrition, and life cycle nutrition. She is grateful for the opportunity to support so many amazing students and interns who go on to make a truly positive impact on the health and well-being of the individuals and communities they serve. Wanda is also fortunate to work with all the wonderful preceptors in the San Francisco Bay Area who support the internship program and mentor the interns.
Wanda previously worked in inpatient and outpatient care, clinical nutrition management, diabetes training and education, home care, and program management for a healthcare website. Additionally, she has held several leadership positions at the local and state level and is currently serving as a Delegate representing California to the Academy of Nutrition and Dietetics’ House of Delegates.
Wanda is a Bay Area native and loves being close to the mountains, the coast, and San Francisco. In her free time, she enjoys cooking, eating, and anything and everything related to food. She also enjoys gardening, hiking, reading, and playing board games.
Dr. Gretchen George is an Associate Professor of Nutrition and Dietetics at SF State. She has been in the tenure role since 2013. She received her B.S. in Nutrition Science from Cal Poly, San Luis Obispo and completed her M.A. and dietetic internship at Appalachian State University in North Carolina, focused on Public Health Nutrition. She has a Ph.D. in Nutritional Biology with an emphasis in Community and International Nutrition at UC Davis. In addition to teaching at SF State, Gretchen is also currently a Healthy Living Educator for the Stanford BeWell Program.
Gretchen is passionate about prevention and empowerment. She teaches Seminar in Human Nutrition and Metabolism for the interns, as well as numerous undergraduate courses including advanced nutrition, nutrition education, and community nutrition and assessment. In the classroom she shares findings from food literacy research in food-insecure students. Additionally, she includes students in community-based research and has begun exploring weight stigma in students in health-related majors, with the overall goal of increasing body positivity in health professionals, adolescents, and adults.
Prior to coming to SF State, Gretchen conducted research on the impact of adolescent summer camp programs focused on lifestyle and healthy eating and their impact on cardiovascular biochemical markers in overweight and obese at-risk youth. She also was a senior research dietitian at Stanford University School of Medicine in the Stanford Research Prevention Center where she worked on studies related to cardiovascular health, sleep, and the impact of macronutrient intake on weight along with Dr. Christopher Gardner and other primary investigators. Gretchen also has experience as a consultant dietitian, doing nutritional assessments in long-term care facilities.
Additionally, Gretchen has held several leadership and volunteer positions in the American Society for Nutrition (ASN) including serving as Chair from 2018-2019. She currently serves on the Awards Committee for the Nutrition Education and Behavioral Science research interest section of ASN.
In her spare time, Gretchen enjoys running, hiking, and traveling with her family.
Jennifer Stimson is a Michigan native raised in Metro Detroit; a place rich in cultural diversity so she feels right at home at SFSU, a university known for its multiculturalism. Jennifer completed her M.S. in Foods and Nutrition and internship at the University of Georgia.
Jennifer has been with San Francisco State University since 2016 and is the Didactic Program in Dietetics Director. She teaches the Seminar in Foodservice and Nutrition Program Management for the internship program, as well as numerous undergraduate classes. Jennifer is passionate about incorporating food and culture into the classroom and believes that students bring unique experiences, strengths, and ideas to enrich the classroom and create a meaningful space.
Her background includes extensive experience in hiring, training, and mentoring staff in the public health setting as well as ensuring quality, sanitation, and safety in large-scale community nutrition meal programs. Jennifer previously worked as a lead dietitian for San Mateo County in the WIC department where she provided training and mentoring for nutrition staff, for the Adult and Aging Services Department where she ensured safe and nutritious meals for over 5000 seniors, and the Head Start Program where she managed meal programs for over 1000 children. She also previously worked with Ketchum Public Relation's Food and Beverage Practice and provided outpatient medical nutrition therapy for patients with HIV/AIDs at San Mateo County’s Edison Clinic. Jennifer also has done private practice and consulting work and is currently a health educator at Kaiser Permanente where she teaches diabetes classes.
When Jennifer is not teaching, she enjoys cooking, eating, gardening, traveling, and taking hikes.
Jami Baltz has been teaching at SF State since 2019. She received her B.S. in Nutrition Science and Dietetics from the University of Missouri-Columbia, and her M.S. in Clinical Nutrition from Rutgers, The State University of New Jersey-New Brunswick. Jami has extensive experience in clinical nutrition, including being a dedicated dietetic intern preceptor in the Bay Area. She is currently an Advanced Practice Dietitian at Stanford Healthcare’s Palo Alto Cancer Center, and actively involved in the care of a diverse group of oncology patients and several quality improvement projects. Previously, she has been a clinical inpatient dietitian at Stanford Healthcare, Kaiser San Francisco, and San Francisco General Hospital, and an account manager for Nestle Healthcare Nutrition. Her areas of interest include oncology nutrition, critical care, enteral and parenteral nutrition support, surgical nutrition, and nutrient metabolism.
Jami currently teaches the Seminar in Medical Nutrition Therapy for the internship as well as advanced nutrition courses for our undergraduate dietetics program. She is passionate about supporting our interns in transitioning from learning about clinical nutrition in textbooks to applying that knowledge in their clinical rotations. She loves combining her professional experience and broad knowledge base to guide and foster the growth and development of our interns in the art and science of medical nutrition therapy care for patients and clients.
In her spare time, Jami enjoys spending time at the beach with her husband, trying new foods, and relaxing with her cats, Bebop and Hiro.
